Tasting notes:
The mousse quickly dissipates leaving scattered bubbles appearing at a consistent rate.
Subtle spice and white pepper notes greet you on the nose and the red fruits are reminiscent of raspberry coulis that would accompany a dessert. A floral mid palate with hints of juicy tartness follows.
The palate is dry, despite the perceived sweetness coming from concentrated berry flavours. Raspberries dominate on the palate – a mixture of fresh and raspberry coulis. The flavour tapers away which highlights the spice and pepper notes on the finish.
